Marcus Samuelsson’s *Back to Green* explores how nourishing, plant-forward ingredients connect food with ancestry, migration, resilience, sustainability, ritual, and healing. Drawing on culinary traditions from the Caribbean, the Americas, the Pacific, Asia, and Africa, Samuelsson highlights ingredients such as coconut, rice, corn, acai, plantains, teff, and chilis while sharing recipes designed for healthy living and communal enjoyment.
The event accompanies the cookbook *Back to Green*, which profiles chefs and producers from around the world and amplifies the cuisines of underrepresented communities. Featured recipes include a papaya passion fruit smoothie, steamed black cod with spicy pineapple salsa, eggplant omelet with banana ketchup, a rice noodle bowl with ginger and garlic broth, lentil salad with coconut turmeric vinaigrette, and vegetarian injera lasagna. Marcus Samuelsson is a world-renowned chef, restaurateur, author, television personality, and eight-time James Beard Award winner. His work includes Red Rooster Harlem and more than a dozen other restaurants, as well as Emmy Award-winning production and appearances on programs including *Chopped* and *Top Chef*. He is also involved with culinary education and food security through the Culinary Careers Program and World Central Kitchen.
